The lemons that go into making the sublime Pallini Limoncello in November’s Gin of the Month box are not your average lemon. These are the world’s most incredible cultivated lemon – the Amalfi lemon, plucked straight from the steep cliffs on Italy’s southwest coast! Slow to ripen – these lemons take up to a year to grow – and bigger than a fist, the Amalfi lemon is also incredibly flavourful.
For Micaela Pallini, whose family has been distilling drinks and fine liqueurs for almost 145 years, the Amalfi lemon’s incredible quality isn’t new news.
Grown without the use of pesticides and harvested by hand from the steep, rocky slopes, where even the most modern machinery can’t go, these unctuously oily lemons are taken straight to the Pallini laboratory, where they’re meticulously peeled – no pith, the bitter white flesh, can be included – and shipped to Rome, where they’re turned into a limoncello like no other.
“Our family recipe makes the most of these precious raw materials,” Micaela says.
At their distillery in Rome, the Pallini family use pioneering methods to make a limoncello like none other. Floral, perfumed and a perfect waypoint between tart and sweet, the liqueur in our November Gin of the Month box is where history and heritage meet innovation and creation.
“That’s why we think it’s the best – the balance of the perfume and the balance of the taste,” says Micaela. “And it pairs very well with gin, enhancing the botanical flavour of the spirit it’s paired with.”

Limoncello Gin Fizz
15ml lime juice
Dash of simple syrup, to taste
2 thyme sprigs
Sparkling water, to top up
Fill a mixing glass with ice and add your gin, limoncello, lime juice, simple syrup and thyme sprigs. Stir to combine and cool, then strain into a rocks glass over ice and top with sparkling water.
Gin Agrumi Highball
30ml Pallini Limoncello
75ml grapefruit soda
Lemon round, to garnish
Fill a glass with ice and add your ingredients. Stir gently to combine, garnish and serve.
22.5ml Pallini Limoncello
37.5ml pink grapefruit juice
Lemon twist, to garnish
Fill a cocktail shaker with ice and add your first three ingredients. Shake and strain into a cocktail coupe. Garnish with a lemon twist and serve.
