This Peach & Raspberry Gin Mimosa is the perfect cocktail for Mother's Day!

Here at Craft Gin Club, we love mixing gin and prosecco to create delicious sparkling cocktails. 

Whether it’s the classic French 75, a fabulously festive Clementine Gin Royale (complete with gold flakes!) or a ginny take on the Aperol Spritz, that mix of rich, earthy gin and bright, bubbly prosecco is always a winner. 

And when spring comes around the corner, few gin-and-prosecco cocktails quite hit the spot like this peach, raspberry, gin and prosecco-based twist on a classic Mimosa. It’s brimming with the abundant floral, fruity and bright flavours we love to sip in the sun. 

This gorgeous Mimosa recipe swaps the traditional orange fruit juice, for a purée of peaches and raspberries and it adds a rich splash of gin to accompany the sprinkling wine. 

It’s so easy to make at home and you can make the fruit purée in big batches so it’s ideal for when you have your gin pals over or for when you are throwing bigger spring and summer parties. 

The only problem you will have is deciding which gin to choose for this recipe. But worry not, because we have you covered there too. 

For this cocktail, we recommend using Sky Wave White Horse London Dry Gin, Craft Gin Club’s March 2024 Gin of the Month. This wonderful London Dry is particularly well-suited to this cocktail recipe because it is brimming with remarkable floral notes which are balanced perfectly with those quintessential juniper tones.

Sky Wave White Horse London Dry Gin therefore adds a beautiful floral fragrance to the cocktail that compliments the juicy, sweet peach and raspberry flavours perfectly, while the earthiness of the juniper adds delectably mature layers of sophistication to the serve.

The light, crisp prosecco then elevates the whole experience with its iconic bubbles and white wine profile. 

All you have to do is add everything to a glass and serve. Et voila! You have a stunning Peach & Raspberry Gin Mimosa that is sure to impress any cocktail fan.

Peach & Raspberry Gin Mimosa

Raspberry and peach Mimosa cocktail recipe

For the purée:
1 ripe peach, sliced
4-5 raspberries
15ml simple syrup
1 tsp water

For the cocktail:
50ml peach and raspberry puréepuree
35ml Sky Wave White Horse London Dry Gin
Prosecco, to top up
A few fresh raspberries, to garnish
Slices of peach, to garnish

For the purée:
Blend all of the ingredients until smooth and liquid. If the purée seems too thick, add a little water to loosen it. If the purée seems too watery, simply add more fruit.

For the cocktail:
Add the purée and gin to your glass and stir. Top with the prosecco. Garnish, serve and enjoy!

Top tip:
If you can’t get hold of a fresh peach at this time of year, tinned or preserved peaches are just as good, just drain and pat them dry first.

Similarly, you can defrost a handful of frozen raspberries for this if fresh ones aren’t available right now.
