Here at Craft Gin Club, we love experimenting with fabulous and unusual taste combinations that bring the most out of our gin. In this cocktail recipe, you take the sweet juiciness of pineapple and BBQ or grill it to add smoky, caramelised notes; combine with your favourite dry gin and the refreshing, bubbly tartness of prosecco, and you’ve got a marvellously thirst-quenching, sweet cocktail. It’s absolutely fantastic with BBQ food. Try it! You’ll love it.
Pineapple & Prosecco Royale
2 pineapple wheels
70ml pineapple juice
Prosecco, to top up
Grill the pineapple wheels for 5 minutes before turning them over. Continue grilling until they are lightly browned, smoky and caramelised. Cut one wheel of pineapple into wedges and muddle it into your cocktail shaker. Add ice, gin and juice. Shake for two minutes. Strain into a glass with ice. Top up with prosecco and garnish with the remaining grilled pineapple wheel.
