Summer Berry Highball
1 strawberry, hulled
3 raspberries (plus extra to garnish)
50ml gin
15ml elderflower syrup
15ml lime juice
45ml apple juice
50ml soda water
Fresh mint, to garnish
Add the strawberry and three raspberries to a shaker and gently muddle them. Add gin, elderflower syrup, lime juice, apple juice and ice and shake well. Strain into a highball glass over ice and top with soda. Garnish and serve. Cheers!
