1. Begin by making your syrup. In a saucepan, combine your honey, sugar and water with your figs. Heat, stirring until the sugar and honey dissolve and the figs begin to soften. When the fruit is breaking apart, remove the pan from the heat and add the thyme. Allow to infuse for 30 minutes, then finely strain into a clean container.
2. To make your cocktail, pack a cocktail shaker with ice and add your gin, syrup and lemon juice. Shake, then strain your cocktail into a glass or coupette. Garnish with thyme and enjoy!
