With only a few ingredients, this light and refreshing easy cocktail recipe won’t take long to put together - it’s one we revisit every season. Pssst - this recipe works best with ripe peaches, to give it that extra decadent sweetness. Add in some fresh mint, and you’ve got a winner. You can *almost* feel the sun on your skin after the first sip - cheers!
Peach Gin Smash
50ml gin
1 peach
10ml lemon juice
Soda water, to top up
10ml simple syrup
Fresh mint, and some to garnish
Slice the peach, removing the pit (and save a few slices to garnish). In a cocktail shaker, muddle the peach slices, simple syrup and mint sprigs. Next, add in your gin, lemon juice and ice and shake. Top with soda water, more ice if needed and garnish with peach slices and a mint spring or two.
