On a hot summer day, what could beat a cold G&T? This gin and tonic granita! Grab your favourite gin, a bottle of flavoured tonic - we’ve used the Franklin & Sons Sicilian Lemon Tonic that we featured in June 2017's Gin of the Month box - and whip up this delicious summer treat. Make it in the morning and it’ll be ready for your BBQ later!

Lemon and Franklins lemon tonic granita

Gin & Tonic Granita

100ml water
200g caster sugar
150ml craft gin
500ml Franklin & Sons Sicilian Lemon Tonic (or similar)
Juice of 2 lemons
Mint, to garnish

Heat the water and sugar over a medium flame until dissolved, about five minutes, and take off the flame. Add the gin, tonic and lemon juice and pour into a freezer-proof container, giving a little stir for good measure.

Allow your mixture to cool to room temperature and pop it in the freezer. After an hour, remove your granita and whisk it with a fork, breaking up the ice crystals as they form. Put the mixture back in the freezer for another hour, then whisk again. Break up the granita with a fork to give it a lighter texture, and serve in individual bowls with a sprig of mint.
