The refreshing notes of cucumber combine perfectly with the juniper nots of gin! So this gorgeous green gin cocktail is the refreshing change you want after all the rich Christmas cocktails! Plus, it uses a whole cucumber which is one of your five a day…so, it’s good for you!
Cucumber and Gin Cooler
1 x cucumber
30ml elderflower cordial
50ml gin
Ice
Cucumber slices (lengthways)
Add chopped cucumber and elderflower cordial to a food processor and blend until smooth. Strain the contents through a sieve (you may need a spoon to help it through) Add the gin and stir. Pour into a tumbler with ice and sliced cucumber and serve!
