Tomatini
1 large tomato
50ml gin
15ml white balsamic vinegar
15ml lemon juice
10ml simple syrup
Muddle the tomato in the bottom of a cocktail shaker, then add gin, vinegar, lemon juice and simple syrup. Add ice. Shake and strain into a chilled cocktail glass.
