Looking for a lighter version of a red snapper cocktail? Then how about the Tomatini, the savoury taste, without the soupy feel.
Muddle the tomato in the bottom of a cocktail shaker, then add gin, vinegar, lemon juice and simple syrup. Add ice. Shake and strain into a chilled cocktail glass.
1 large tomato
15ml white balsamic vinegar
15ml lemon juice
10ml simple syrup*
*To make the sugar syrup, simmer 250g of sugar with 250ml of water until combined and slightly thick. Strain into a container and allow to cool. Store, sealed and in the refrigerator.
