Warming, spiced and a little sweet, this cocktail captures the perfectly paired flavours of a comforting apple crumble in liquid form! And if you love crumble, check out our ginny plum and ginger crumble bars baking recipe too!

This lovely autumn cocktail recipe is from our fabulous book, Gin O’Clock: A Year of Ginspiration, and is one of dozens of delicious and easy guides to making tasty tipples at home. If you like the look (and taste!) of this cocktail, you can get a copy of the book here.

To make this cocktail, you will need to make your apple and cinnamon sugar syrup ahead of time (at least half an hour, ideally a few hours). The good news is, making the syrup takes mere minutes and is seriously easy! Plus once, you’ve made a batch, you can keep the leftover syrup in the fridge and take it out for use in all sorts of cocktails, puddings or even drizzled over ice cream!

To make the flavoured syrup, combine 250ml of apple juice and 250g of sugar in a saucepan with two teaspoons of cinnamon – or more, if you like the flavour to be strong! You could also experiment with other autumn spices such as nutmeg if you like.

Simmer gently over a low heat until reduced to a syrupy consistency, then remove from the heat and leave to cool before using.

Apple and Cinnamon Gimlet

50ml gin
20ml apple & cinnamon syrup
1 tbsp fresh lemon juice

For the apple & cinnamon syrup:
250ml apple juice
250g caster sugar
2 tsp ground cinnamon

Cinnamon stick and apple slices, to garnish

Add the gin and lemon juice to a cocktail shaker (or large, sturdy mixing glass) along with 20ml of the apple and cinnamon syrup, then fill your shaker with ice. Shake and strain into a chilled Martini or coupe glass. Garnish with a slice of apple and a cinnamon stick, and serve.
