In September, anyone lucky enough to have a fruit tree in their garden (or a generous neighbour who has one!) will quickly find themselves with an abundance of ripe apples, pears or plums.

Instead of stewing them into tangy chutneys for later in the year, why not give this gorgeous traybake a try?! This ginny take on the classic crumble is filled with juicy plums, buttery crumble and a warming hit of ginger - just the thing for seeing in the changing of the seasons!

Plum & Ginger Crumble Bars

Ingredients
For the filling:

6 plums
100ml gin
50g light brown sugar
1 tsp cinnamon
1 tsp vanilla
2 tbsp cornstarch
1-inch fresh ginger

For the crumble:

220g plain flour
100g porridge oats
100g light brown sugar
1 tsp baking powder
1 tsp powdered ginger
¼ tsp salt
200g slightly salted butter, melted

Method

1.       Pit and thinly slice the plums into a bowl, and cover with 100ml of gin and 1 tbsp of brown sugar. Leave to macerate for a few hours.

2.       Preheat the oven to 190°C /180°C fan/gas mark 5, and line a 20cm square baking tin with parchment paper.

3.       Drain the plums, then mix in the cinnamon, vanilla, cornstarch and the remaining brown sugar for the filling. Peel and grate the fresh ginger and mix into the plum filling.

4.       To make the crumble, mix the flour, oats, brown sugar, baking powder, powdered ginger and salt into a bowl. Pour in the butter and mix to combine until it forms a crumbly dough.

5.       Firmly press ½ of the crumble into the pan and bake in the oven for 10 minutes until golden brown.

6.       Evenly spread the plum filling across the crumble layer, then cover with the remaining crumble. Bake for 30 minutes until light brown.

7.       Leave to cool completely before cutting. Serve with custard or ice cream, and your favourite G&T of course!
