This deliciously boozy banana bread is made with toffee gin and filled to the brim with chocolate! It's easy to bake at home and is sure to impress all of your favourite sweet-toothed, gin-loving friends - and any chocoholics for that matter too.

To make this marvellously indulgent banana bread, you are going to need lots of chocolate - we recommend at least 70% dark chocolate - and lots of ripe bananas. And we do mean ripe! The darker the banana skin the better for this one.

Of course, a toffee gin is a key ingredient too. You can buy toffee gin but we think it is much more fun to make your own at home. You can find a really easy homemade toffee gin recipe at this link - trust us, it's more than worth the effort.

The delectably mellow and fragrant banana flavours work so well with the rich dark chocolate and sweet, boozy toffee gin in the recipe.

The spices then add a wintery hum that is moreish and warm.

Toffee Gin & Chocolate Banana Bread recipe

The best Toffee Gin & Chocolate Banana Bread recipe:

100g butter, softened
175g light brown sugar
4 ripe bananas, mashed
2 eggs
2 tbsp toffee gin
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
1 tsp baking soda
1 tsp salt
200g plain flour
150g chocolate pieces (plus extra for garnishing)
Handful of nuts, to garnish (optional)

Preheat the oven to 180°c and line a large loaf tin. Beat together the butter and sugar until light and fluffy, then stir in the bananas until well mixed.

Fold in the eggs one at a time, then mix in the toffee gin, vanilla and spices. Measure the flour, baking soda and salt into a separate bowl, then sift into the batter.

Mix in the chocolate pieces until just combined, then pour into the loaf tin. Bake for around an hour, until the top is golden and springy to the touch, and a skewer comes out clean. Leave to cool on a rack, garnish with melted chocolate and nuts (optional) then slice and serve.
