If you’re an avid gin fan and a budding mixologist, creating a perfectly frothy cocktail is quite the achievement. Using eggs in cocktails is something many might steer away from, but if you embrace this seemingly off ingredient you’ll be in for a treat! Delightfully pink, silky in texture and with a perfectly frothy top, the Clover Club is the ultimate cocktail for showing off your skills.
Shake all ingredients in a shaker packed with ice until chilled. Strain, discard ice from shaker, and add back to shaker. Shake again and pour into a chilled Coupe glass. Garnish with a fresh raspberry to serve.
* To prepare raspberry syrup, smash 65g fresh raspberries and 240g sugar together in a mixing bowl. Let macerate for at least 30 minutes. Then, pour 120ml warm water over mixture and stir until sugar dissolves. Strain mixture and add 15ml vodka or gin to emulsify.
