Cocktail: Rosemary Greyhound

This gorgeous, floral tipple is ginny perfection! With a few simple ingredients you can whip this up in no time.

120ml grapefruit juice
60ml gin (Old Tom preferable)
30ml rosemary syrup*
soda water
grapefruit wedge, to garnish
rosemary sprig, to garnish

*For the rosemary syrup:
3 rosemary sprigs
200g sugar
200ml water


*For the rosemary syrup:
In a small saucepan over low heat, combine sugar and water until sugar is fully dissolved. Pour mixture over rosemary in a resealable container and allow mixture to cool fully. Strain syrup before using in recipe.

For the drink:
In a large glass filled with ice, mix grapefruit juice, rosemary syrup and gin. Top with soda water and garnish with a wedge of grapefruit and sprig of rosemary to serve.
