Mother May I?
Add the gin, apple juice, sugar syrup and lemon to a cocktail shaker, with ice. Shake vigorously and strain into a chilled coupe glass.
Top up with prosecco and float a quenelle of vanilla ice cream on the top. Garnish with dried lemon and a few sage leaves, serve immediately with a spoon!
