Here at Craft Gin Club, we love experimenting with gin to create marvellous new taste sensations, and this beautiful rosemary and thyme-infused cocktail is one of our favourites. Bursting with all the flavours of Provence, the sweetness of sugar syrup and the tart citrus of fresh lemon juice marry in perfect harmony with the subtle notes of rosemary and thyme, which in turn enhance the natural botanicals in your gin. Enjoy!

Rosemary & Thyme Collins

50ml gin
25ml lemon juice
20ml rosemary and thyme simple syrup*
Soda water, to top up
Lemon wedge and thyme sprig to garnish

Combine gin, lemon juice and syrup in a cocktail shaker packed with ice. Shake and strain into a Collins glass and then top up with soda water. Garnish generously and serve. 

*Make your syrup by combining two sprigs each of rosemary and thyme with 250ml of water and 250g of sugar. Simmer gently until the sugar as combined and thickened. Remove the herbs and allow to completely cool before use.
