Tom Collins

60ml gin
30ml lemon juice, freshly squeezed
15ml sugar syrup*
Soda water
Lemon slice, to garnish

To a cocktail shaker filled with ice, add gin, lemon juice and sugar syrup. Shake vigorously until well chilled. Strain into a Collins glass filled with ice and top with soda water. Garnish with a slice of lemon and a single maraschino cherry to serve.

*To make sugar syrup, simply simmer equal parts sugar and water over a low heat for about five minutes, stirring gently, until the sugar dissolves and you’re left with a beautiful syrup. Any remaining syrup will last in a sealed contained in the fridge for at least a few weeks.
