Cocktail: Tom Collins
This classic gin cocktail needs no special skills or fancy ingredients! It’s one of the easiest gin cocktails to make and super refreshing.

Tom Collins
60ml gin
30ml lemon juice, freshly squeezed
15ml simple syrup*
Soda water
Lemon slice, to garnish
To a cocktail shaker filled with ice, add gin, lemon juice and sugar syrup. Shake vigorously until well chilled. Strain into a Collins glass filled with ice and top with soda water. Garnish with a slice of lemon and a single maraschino cherry to serve.

Alternatively, to make sugar syrup, simply simmer equal parts sugar and water over a low heat for about five minutes, stirring gently, until the sugar dissolves and you’re left with a beautiful syrup. Any remaining syrup will last in a sealed contained in the fridge for at least a few weeks.
