These Gin & Tonic Pancakes are your boozy brunch, sorted!

Pancakes aren't just for Shrove Tuesday! A weekend brunch favourite, your choice of toppings and fillings are limitless when it comes to pancakes - but if you're a gin lover, why not gindulge yourself in a stack flavoured with your favourite tipple?

These little, American-style pancakes are a breeze to make... and are sure to be a hit with gin fanatics!

Gin & Tonic Pancakes

Pancakes Fruit Cream Breakfast Dessert

(Makes 4 small servings of American-style pancakes)


For the pancakes:
200g self-raising flour
50ml milk
1 egg
250ml gin and tonic (premixed or made yourself)
Butter, at room temperature

For gin sugar syrup:
1 lemon, juiced
1 lime, juiced
3 Tbsp sugar
3 Tbsp gin


  1. First, make gin sugar syrup by heating up sugar, gin and citrus juices in a pan over medium-high heat. Allow to boil for 2-3 minutes. Remove from heat, pour into a separate container and allow to cool.
  2. For the pancakes, combine your flour, egg and the 250ml of gin and tonic in a bowl. Whisk well until the mixture is very smooth.
  3. Melt a bit of butter in a hot pan and drop the mixture in using a spoon to create small pancakes (Note: you can make them larger, but you'll have much less pancakes to enjoy!).
  4. To serve, drizzle your pancakes with the gin syrup and lemon/lime zest, if desired.
