Call us predictable but, here at Craft Gin Club, our favourite pancake topping is gin and tonic. Yes, a G&T. That’s right, we have managed to find a way to incorporate our favourite tipple into one of our favourite foods…

With a zesty hit of lime, this grown-up, gin-spiked pancake recipe is the perfect treat for Pancake Day (or Mardi Gras or Fat Tuesday, whichever you celebrate).

While we do like a crépe, we think that the fluffier, fatter, American pancakes are the best for this recipe - there’s more pastry to soak up the tonic-infused whipped cream and the maple syrup mixed with London Dry Gin.

A gin lover’s dream, this homemade pancake recipe is easy to whip up, so give it a go. There's no better way to be eating pancakes!


Gin & Tonic Pancakes

Ingredients:

For the pancake mix:
130g flour
60g sugar
10g baking powder
1/2 tsp salt
2 egg
300ml milk
75g fresh lime juice
1/2 tsp vanilla extract
40g melted butter
Zest of 1 lime

For the gin syrup:
100ml maple syrup
30ml gin

For the tonic cream:
1 tbsp sugar
300ml cream
60ml tonic water
Juice of half a lime.

Method:

  1. Combine the flour, sugar, baking powder and salt (your dry ingredients) in a bowl and mix with a whisk.
  2. Combine the egg, milk, fresh lime juice, vanilla extract and melted butter (your wet ingredients) in a different bowl and whisk together.
  3. Pour the wet mixture into the dry mixture and whisk together, leaving some lumps.
  4. Mix in the lime zest.
  5. Add the ginny maple syrup to a pouring jug and mix to combine.
  6. In a bowl, whisk the cream, sugar and tonic water together with lime juice until the cream forms soft peaks.
  7. Fry the pancake batter in butter and flip when bubbles appear.
  8. Serve a pile of the pancakes with the syrup and cream. Enjoy!
