Vanilla syrup has to be one of our favourite flavoured syrups. It's a fabulous way to add that sumptuously rich, mellow and fragrant vanilla flavour, which we all love in baking recipes that use vanilla extract, paste or vanilla beans, to your favourite gin cocktails.

If you happen to frequent some the more popular coffee shops you may already know the delights that can be found when vanilla syrup is used in tasty drinks like an iced coffee (check out the Vanilla Espresso Martini below if coffee is your thing).

That same joy can be found when vanilla syrup is used for gin cocktails. With more flavour than your average simple syrup, which is usually made with sugar and water, the sweet vanilla tones of vanilla syrup are a delicious match for those juniper berry and citrus notes we love in a classic London Dry Gin.

Vanilla Tom Collins cocktail with lemon garnish

Vanilla Tom Collins

50ml gin
25ml lemon juice
15ml Vanilla Syrup
Soda, to top
Lemon wedge, to garnish

Build your cocktail directly in a Highball glass over ice and then give it a quick stir. Top with Soda and garnish with the lemon wedge.


Vanilla Gin Sour cocktail on silver platter with spirit measure

Vanilla Gin Sour

50ml gin
25ml lemon juice
15ml Vanilla Syrup
1 egg white
2 dash Angostura Cocoa Bitters
Lemon twist, to garnish

Add the first four ingredients in a cocktail shaker and shake twice without ice first and then with ice. Strain into a Coupette glass, add two dashes of the Cocoa Angostura Bitters and twist the peel of a lemon on top. Enjoy!


Vanilla French 75 cocktail with lemon peel twist garnish

Vanilla French 75

35ml gin
15ml Vanilla Syrup
15ml lemon juice
Champagne, to top
Lemon twist, to garnish

Add the first three ingredients to a shaker with ice and shake. Strain into a Flute or Champagne Saucer and top with Champagne. Garnish with a twist of lemon peel.


Milk Punch cocktail

Milk Punch

50ml gin
25ml Vanilla Syrup
90ml milk
Grated nutmeg, to garnish

Add all the ingredients to a shaker with ice then shake and strain into a small Latte glass or Goblet. Garnish with some grated nutmeg on top and enjoy.


Vanilla Espresso Martini with coffee bean candles

Vanilla Espresso Martini

50ml gin
10ml coffee liqueur
5ml Vanilla Syrup
25ml fresh espresso
Coffee beans, to garnish

Add all the ingredients to a shaker with ice and shake hard. Strain into a Coupette or Martini glass and garnish with coffee beans.
