Thyme has to be one of our favourite herbs, it just works so well with rich juniper notes of gin; whether as a garnish or a flavour infused into a liqueur as it is in this gorgeous recipe from Seppeltsfield Rd Distillers, the amazing team behind our February 2021 Gin of the Month, Seppeltsfield Rd Distillers House Gin.

With its fruity mix of juices, its thyme-flavoured sugar syrup and its mouth-watering spoonfuls of blackberry jam, all of which work brilliantly with the citrus, floral and herb notes Seppeltsfield Rd Distillers House Gin, this gin cocktail is a lip-smacking tipple that you must try.

Gin Thyme

Gin Thyme cocktail recipe

Ingredients

30ml Seppeltsfield Rd Distillers House Gin
2 tsp of blackberry jam
30ml blood orange juice
15ml thyme-infused sugar syrup
15ml water
30ml lime juice
Pink grapefruit soda

Method

For the thyme-infused sugar syrup: Add 100ml of Simple Syrup to a pan on medium heat with a handful of thyme sprigs. Bring the liquid up to a simmer and then remove from the heat and allow to cool. Sift the thyme sprigs out before using.

Add the gin, jam, juices, water and syrup to a cocktail shaker with ice. Shake vigorously for 30 seconds. Double strain into an ice-filled tumbler. Top with Pink Grapefruit Soda and garnish with a sprig of thyme.
