Taking the classic Negroni cocktail, with its deep, dark and rich flavours, and giving it a sweet, refreshing summer lift, this recipe is a scrumptious delight of complex, elegant flavours.

The delectably mellow yet bright melon tones of fresh watermelon juice work so amazingly well the bitter citrus and fruit notes of Campari and the herbaceous flavours of vermouth in this incredible cocktail recipe. The juniper-forward palate of the gin then elevates the experience like nothing else can.

Finished with a flourish of mint and slice of lime rather than the traditional twist of orange, we have here a truly beautiful tipple!

Watermelon Negroni

Watermelon Negroni Cocktail Recipe

Ingredients

25ml gin (we recommend trying a gin specifically made for Negronis for this, like Siblings Negroni Gin or Four Pillars Spiced Negroni Gin)
25ml Campari
25ml sweet vermouth
Watermelon juice, to top
Fresh mint, to garnish
Lime slice, to garnish

Method

For the watermelon juice: You can either purchase watermelon juice online or simply remove the seeds from fresh watermelon pieces and blend them into a pulp. If you prefer the liquid to be smooth then simply sieve the pulp so that you are left with the juice only. For one serving of this cocktail, the juice of a quarter of a watermelon should be plenty.

Add ice to a rocks glass, pour over the gin, Campari and vermouth. Stir well then top up with watermelon juice and garnish with a sprig of mint and lime slices. Enjoy!

Top tip: This cocktail is perfect for making ahead of time and keeping in the fridge for when guests arrive. Just stir everything in the jug without the ice and leave in the fridge. When its time to serve the cocktail, you just need ice and you are good to go!
