We’re in love with these gorgeous little snowmen shortbread biscuits made by @thatssoplantbased using Doisy & Dam’s D&Ds, which we sent to our members in their January 2021 Gin of the Month box. After all, one of our favourite things about January is that it can get cold enough to snow, and one of our favourite things to do in the snow is to build snowmen.

These buttery, icing-covered, chocolate-strewn, marshmallow-topped shortbread biscuits are so delicious, especially with our own little addition to the recipe: a good glug of gin. That’s right, they may be cute and colourful, but these cookies are certainly a grownups-only treat. Enjoy!



Snowmen Shortbread Biscuits

When choosing your chocolate for this recipe, it can only be Doisy & Dam’s D&Ds. With their incredible high-quality, ethically-sourced chocolate from Northern Columbia, they really do take these biscuity delights to the next level. And for the gin, we recommend a classic London Dry Gin, as those juniper and citrus notes work so well with the sweet icing sugar and crumbly shortbread.

Ingredients

For around 8 biscuits:
Doisy and Dam D&Ds
1tbsp gin
250g plain flour
100g sugar
120g vegan margarine
1tsp vanilla extract
Pinch of salt
4tbsp icing sugar
Writing icing sugar - black
Vegan marshmallows

Method

  1. Preheat your oven to 150°C.
  2. Mix the sugar, flour and salt in a bowl. Rub in the margarine using your fingertips and then bring the mixture into a ball of dough.
  3. Wrap in cling film and rest in the fridge for 20 minutes.
  4. Sprinkle a dusting of flour onto a flat surface and then roll out the dough to your preferred thickness.
  5. Using a circular cutter or sharp knife, cut out the shortbread and place the discs onto a sheet of greaseproof paper on a baking tray.
  6. Bake in the oven for 40 minutes.
  7. Once golden, take the biscuits out and leave to cool for at least 30 minutes. In the meantime, make your icing by mixing the icing sugar and gin together.
  8. When the biscuits have cooled, drizzle the icing over each biscuit. Add the marshmallow to create the snowman’s head.
  9. Add two or three Doisy and Dam D&Ds to make the snowman’s buttons and use the black writing icing to draw on eyes, a mouth and arms. Add an orange sprinkle to make the nose. Enjoy!
