These tasty cocktail recipes are a wonderful ode to summer herbs and berries, they are full of delicious flavours that perfectly complement Rock Rose Citrus Coastal Edition Gin, which we sent to our members in their August 2020 Gin of the Month box.

The umami depth of the gin, and its subtle salinity, go so incredibly well with the fruity, berry notes and herb tones of strawberries, raspberries and basil in these marvellous cocktail recipes, making both truly unique and delectably refreshing summer treats!



Basil & Raspberry Smash

Basil & Raspberry Smash

Ingredients

50ml Rock Rose Citrus Coastal Edition Gin
4 raspberries
5 to 6 basil leaves
15ml lemon juice
10ml sugar syrup
Soda water, to top
Pinch of salt (optional)
Raspberry and sprig of basil, to garnish

Method

Add the raspberries in a shaker and gently muddle it. Add ice, the basil leaves, lemon juice, sugar syrup, gin and a pinch of salt, if using, and shake well. Strain into a Highball or Rocks glass over ice and top with the soda water. Garnish with the basil sprig and 1 or 2 raspberries.

A pinch of salt: As any mixologist (who’s worth their salt) will tell you, adding a pinch of salt is a great way to bring out the other flavours within your cocktail. As long as your pinch isn’t too big, you don’t need to worry about the drink being “salty”, it will simply be extra flavoursome. So kick your cocktails up a notch by giving this top tip a try!


Strawberry And Basil Shrub

This is a perfectly refreshing cocktail - the combination of August’s Gin of the Month and a cocktail shrub makes for a unique drink. The basil gives it a nice herbal sweetness, but mint could be used instead.

Strawberry And Basil Shrub Cocktail Recipe

Ingredients

50ml Rock Rose Citrus Coastal Edition Gin
25ml strawberry and basil shrub
Soda water, to top up
Basil leaf and strawberry, to garnish

Method

To make your ‘shrub’: Add equal parts chopped and hulled strawberries and caster sugar (for example, 500g of each — this is time consuming, so make a big batch!) to a jar or container and stir with a spoon. Add the basil and leave to rest for a few hours — usually around four — until the fruit becomes liquid, stirring here and there. When you have a syrup, discard the fruits and give an extra stir to dissolve any leftover sugar. Measure out how much syrup you have, and add half that amount of balsamic vinegar (for example, if you have 100ml of syrup, add 50ml vinegar). Leave for a day or two to allow the vinegar to incorporate into the syrup and you’re ready to go.

For the cocktail: Fill a highball glass with ice. Add your gin and shrub, then top with soda water. Garnish and enjoy!
