In this feature, we are getting the low-down on everything you need to know about this mouthwatering summer expression from the master distillers at Manly Spirits Co.
For those of you that don’t already know, Manly Spirits Co. are the gin-credible distillery behind Craft Gin Club’s August 2019 Gin of the Month, which was their magnificent Australian Dry Edition - still available on the Craft Gin Club online shop here.
Based near Manly Beach, Sydney, they were the very first artisan distillery to make Sydney's stunning Northern Beaches home.

Today, they specialise in creating uniquely Australian craft spirits, including whisky, botanical vodka and gin.

Manly Spirits Co. ‘The Beaches’ Gin is a celebration of those tropical Australian summers spent on the beach.
And, to help protect those beaches, they donate $5 from every bottle sold to the Australian Marine Conservation Society, a charity dedicated to protecting Australia’s ocean wildlife.
Funds raised will directly contribute to reducing ocean plastics and protecting some of Australia’s threatened and endangered marine species. So you might call getting yourself a bottle of this gin a “gin-gin” situation.
So, without further ado, let’s take a closer look at Manly Spirits Co. ‘The Beaches’ Gin. How is it made? What does it taste like? How do you serve it? We’re revealing all below…
How is Manly Spirits Co. ‘The Beaches’ Gin made?
The remarkable team at Manly Spirits Co. create ‘The Beaches’ Gin using twelve key botanicals selected using a rigorous testing process involving their fifteen miniature stills.
The final recipe is a mix of tropical fruits, local coastal ingredients and classic Australian dry botanicals:
Juniper, sea parsley, mango, rainforest lime, coconut, finger lime, banana, coriander, pineapple, angelica, blood orange and orris.
To craft the finished spirit they use two key methods, a five-day singular infusion process for the tropical fruits and a more traditional distillation process for the other botanical ingredients.
Finally, shredded coconut, dried mango and banana are infused into Manly Spirits’ Australian dry base gin for twenty-four hours.
Everything is combined to create a luscious, peach-pink craft gin with lots of tropical allure.
The gin is then bottled in Manly Spirits’ iconic glass bottles, which are given a label specially designed by local artist, Tegan Franks, to capture the essence of beach living.

What does Manly Spirits Co. ‘The Beaches’ Gin taste like?
On the nose, Manly Spirits Co. ‘The Beaches’ Gin has a bouquet of sweet, bright, tropical, floral coconut, banana and mango atop an invitingly rich base of juniper and sea parsley.
The palate is creamy and luxuriously smooth, with delectable pineapple notes joined by nutty and citrus tones that complement the tropical fruit flavours wonderfully.
‘The Beaches’ Gin has a finish that is refreshingly lush and dry, with pine and citrus flavours lasting right up to your next sip.
We used loads of Australian pineapple, rainforest lime and blood orange in the distillation process, highlighting tropical notes with a dry/citrus finish. We then layered in our tropical fruits – shredded coconut, dried mango and banana that infused in the gin base for 24 hours. The whole process takes 5 days of infusing to extract all oily aromatics from the coconut, fattiness & roundness from the banana, and sweet tropical notes from the mango.

50ml Manly Spirits Co. ‘The Beaches’ Gin
200ml Mediteranean tonic
Fresh mango, slices
Add the gin and tonic to a Copa glass with ice and stir. Garnish, serve and enjoy!

Manly Spirit Co.’s Gin-a-Colada cocktail recipe:
50ml Manly Spirits Co. ‘The Beaches’ Gin
30ml Pineapple juice
30ml Sweetened coconut cream
Mango slices, pineapple slices and coconut flakes, to garnish
Shake the gin, pineapple juice and coconut cream with ice. Strain into a glass with more ice. Garnish, serve and enjoy!
For a frozen version, blend the gin, pineapple juice and coconut cream with ice until smooth.
