Combine your gin and sherry in a jug filled with ice and stir slowly, until the cocktail is chilled and slightly diluted. Strain into a chilled cocktail coupe and top up with your London Essence Grapefruit & Lemon Verbena Soda. Garnish with an olive and serve.
