Here at Craft Gin Club, we love all things lime - whether it’s sliced, wedged, muddled or juiced - we’re not fussy! There’s just something so refreshing about a zingy, fresh lime flavour, isn’t there? Which explains why it’s the main event in many iconic drinks, like a classic daiquiri, gimlet, margarita and mojito (pssst - we love this ginny lemon mojito recipe).

Lovely limes are a star ingredient in gin baking too, so it’s worth checking out our amazing gin and key lime pie here. This Lime & Jasmine Collins is a fabulous summer cocktail recipe - the floral jasmine syrup complements the aromatic botanicals in the gin perfectly - which is why you’ll adore this easy-to-make cocktail upon the first sip!

Lime & Jasmine Collins

Lime mix

50ml Gin (this one with jasmine botanicals works perfectly)
The juice of half a lime, plus extra to garnish (try these handy lime garnish packs)
275ml Lime tonic
25ml Jasmine syrup*
Fresh mint to garnish

Add the gin, jasmine syrup and fresh lime juice together in a glass and stir. Add ice as desired. Top up with lime tonic and garnish with slices of lime and fresh mint. Chin chin!

*Jasmine syrup should be easy to find, but you can also make your own, it’s pretty simple:

You need 65g of fresh jasmine flowers, 250ml water and 170g caster sugar.

First, rinse your jasmine flowers. Then bring a pan of water to the boil, adding your sugar and mixing until dissolved. Turn the heat off and add your jasmine flowers, allowing them to steep for 2 hours. Then place a sieve over a bowl and drain the liquid. Then, simply discard the flowers and place the syrup in a jar!
