Irish Coffee - that wonderful, warming blend of aromatic, rich, dark coffee topped with a luscious layer of cream and hiding just a little whisky kick of boozy heat - is a classic winter cocktail for a reason. (Can we call it a cocktail? Hey, it’s got alcohol in it and a couple of other ingredients, it tastes delicious - let’s call it a cocktail.)

Sometimes, though, it can be fun to play with the classics and try them a new way - and with this twist on the traditional Irish Coffee recipe, we think we’ve found a winner here at Craft Gin Club! A new classic, even? Yes, we’re that confident!

The twist is simple, but oh-so-delicious: simply replace the whisky with your favourite gin (any decent London Dry Gin will do) and a dash of Disaronno liqueur for an added layer of almond-infused sweetness. It’s unbelievably good.

Here, we’ve also added a little spoonful of demerara (or soft brown sugar would also work) for a little extra sweetness, to balance the gin, but if you’re using Disaronno it might be sweet enough already - give it a little taste first, if you’re unsure. Similarly, you could skip the amaretto all together and simply stick to gin (again, the quantities below are for our taste preferences, but go with whatever works for you).

Try the recipe below for the most soothing, indulgent hot cocktail you’ll try this winter.

Gin & Amaretto Irish Coffee

30ml gin
15ml Disaronno
1 tsp demerara sugar
150ml freshly brewed coffee
50ml double cream, to top up (or to your preference)
Grated nutmeg, cinnamon, or cocoa powder to garnish

While your coffee is brewing, fill a mug or thick (shatterproof) drinking glass with hot water to warm it up.

When the coffee is ready, discard the hot water and add the gin, amaretto (if using), sugar and coffee. Stir to dissolve the sugar.

Now create the layer of double cream on top: you can do this by pouring the cream very slowly over the back of a spoon so that it sits in a blanket on the top of your drink. Sprinkle with your favourite winter spice or a little cocoa powder, and serve.
