Give me the sweet stuff: 3 of our favourite honey-infused gin cocktails to try at home

As spring bursts into bloom, bees are hard at work collecting the nectar they use to produce the golden honey which made the Dodd’s Limited Edition Gin in our April ‘19 Gin of the Month box so delightful. Try these three mouthwatering gin tipples inspired by bees and blossoms!

HONEY ROSE MARTINI

Ingredients:

50ml gin
25ml vermouth
Dash of bitters
10ml rose and honey syrup*
Rose petals, to garnish

Method:

Combine the gin, vermouth, bitters and rose and honey syrup in a cocktail shaker packed with ice. Shake for 30 seconds. Strain into a martini or coupe glass, garnish and serve.

*Top tip:

To make the rose and honey syrup, add equal parts honey and rose water to a saucepan. Allow the honey to dissolve over medium heat, before removing and allowing to cool.


CHAMOMILE HOT TODDY

Ingredients:

1 chamomile teabag
1 cup of water
1 tbsp honey
50ml gin
25ml lemon juice
Chamomile flowers, to garnish

Method:

In a saucepan, brew your chamomile tea. Discard the teabags and stir in your honey. Remove from heat and add the gin and lemon juice. Garnish and serve immediately.


SPARKLING BEE’S KNEES

Ingredients:

35ml gin
20ml honey
20ml lemon juice
70ml Champagne or sparkling wine

Method:

Combine the gin, honey and lemon juice in a cocktail shaker filled with ice. Shake for 20 seconds. Strain into a coupe and top up with Champagne.
