Inspired by the flavours of our Brazilian Gin of the Month for July 2020, we’ve looked to some of Brazil and South America’s most iconic cocktails and given them a delicious ginny revamp!

Here, our Brazilian mixologist, Maria, has taken the classic Mai Tai cocktail recipe, which combines flavours of rum, orange, orgeat (almond) and lime, and given it a fruity twist.

In place of rum, of course, we’re using a boozy base combination of both gin and cachaça (Brazil’s native spirit, distilled from sugarcane and widely available in the UK) and adding some beautiful fresh strawberries, for a layer of sweet and fruity flavour. If you can’t get your hands on any cachaça, then simply double up on the gin!

We’ve kept the orange liqueur in the form of triple sec, and also included the optional addition of orgeat (almond) syrup. This deliciously sweet, nutty syrup is one of our favourite cocktail flavourings, and can be bought online, in bigger supermarkets or specialist drinks shops - or you could make your own (see below). Alternatively, you can swap out the orgeat for simple syrup - equal parts caster sugar and water heated gently until you form a smooth syrup.

The end result is a fruity, slightly sweet but quite punchy cocktail that, served over ice with a few mint leaves and a squeeze of lime, is a happy marriage of the best of Brazilian and British cocktails - we’ll drink to that!

Strawberry Gin Mai Tai

25ml Gin
25ml triple sec
20ml freshly squeezed lime juice
25ml cachaça (optional)
15ml orgeat syrup (or simple syrup)
2 fresh strawberries
1 dash Angostura bitters (optional)
A mix of fresh strawberries, mint leaves and/or lime, to garnish

Add the strawberries to your cocktail shaker and muddle (squash them lightly) to release the juices. Add the rest of the ingredients, lots of ice and shake well. strain into a rocks glass over crushed ice and garnish with some sliced fresh strawberries, a few fresh mint leaves and lime.

To make your own orgeat syrup, combine 250ml unsweetened almond milk with 500g caster sugar, 1/2 teaspoon almond extract and 60ml vodka, then heat gently over a pan until the sugar dissolves and you’re left with a smooth syrup.
