Meet the Maker

For Jared Brown, the distiller behind this month’s amazing discovery gin, beautiful fresh ingredients have always been an entry point to the world of food and drink.

“It’s working with wonderful natural ingredients that has always made me really excited,” says Jared.

In fact, Jared was once a professional chef, and trained with the Michelin-starred Roux brothers. He says, “Their focus was all about starting with the best ingredients, and my philosophy today is very much an extension of this.”

When cooking lost its appeal and the desk job that followed got boring, Jared began experimenting with brewing. He used the finest malt and hops he could to produce beautiful beers. Soon he was setting up a Gloucester Brewery, with a premises in the city’s beautiful historic dock district, where barley was once kilned before being shipped across England via the River Severn.

Jared says, “Fox’s Kiln was the original name of our building. It’s fantastic that it’s now gone full circle. Once again it’s being used as a part of the brewing – and now distilling – process.”

In 2019, with his brewery and craft beer bar TANK thriving, Jared and his team turned their attention to gin. First they perfected their signature recipe, then began branching out. As a lover of fresh produce and flavour, Jared was thrilled to find that the spirit was a perfect canvas for fresh fruits.

Jared now produces a number of beautifully flavoured gins, but it was the blood orange expression – modern, tart and sophisticated – that the crack Craft Gin Club tasting team fell instantly in love with.

“Blood orange has a really intense depth of flavour,” says Jared, “with a subtle sweetness. For me, it just worked so well with our classic blend that we decided to make it part of our core range. It’s become our most popular gin.”

This gin is made with no artificial flavourings at all, just mountains of zesty blood orange peel. To make this gin, Jared and his team combine distilled blood orange zest with Fox’s Kiln signature spirit, which has been macerated in blood orange peel for a week to absorb all of this amazing citrus fruit’s flavour.

“What I love about this gin is that it isn’t too sweet,” Jared says. “Our blood orange gin uses nothing artificial – just a large amount of real fruit. When people taste it they often say, ‘Wow! It tastes so real!’”
