You’ve probably tried fresh, juicy slices of cooling cucumber in your gin and tonic, as a garnish, but have you ever thought of taking this refreshing flavour pairing and adding it to a classic Martini?

Yes, when combined with a little sweet simple syrup and some fresh mint leaves, the result is a crisp, reviving cocktail that is absolutely divine on a hot summer evening!

Cucumber Martini

75ml gin
25ml sugar syrup
5 thin slices of cucumber, plus more to garnish
Half a bunch of mint leaves
1 tbsp dry vermouth

Fill a mixing jug with ice and add all your ingredients. Stir gently until the mixture is cold and a little diluted, then strain into a chilled Martini glass or cocktail coupe. Garnish with a thin slice of cucumber or a cucumber ribbon and serve.
