How is Island Dark Rum made?

Island Dark Rum is made by Michael and Katie Morrison, co-founders of Isle of Barra Distillers Co., and their team.

They infuse their rum with five key botanicals, hand-harvested, local carrageen seaweed, cloves, cardamom, coconut and orange peel, for 18 hours using two traditional pot stills.

Spirit is then reduced to bottling strength, 38% ABV, and then bottled in specially designed bottles made with eco-friendly, 52% recycled glass - sustainability is at the heart of everything they do at the Isle of Barra distillery.

The Island Dark Rum bottle is then labelled with a bespoke label that has a hand-marbled design by the artist Jemma Lewis, who uses the very same carrageen seaweed used in the rum as a thickening agent to help achieve that characteristic marbling effect.

The rum is then sent out to rum fans all over the world.

Where is Island Dark Rum from?

The Isle of Barra Distillers Co. is based in Castlebay on the southern coast of Barra, which is the most southernly inhabited island of Scotland's weather-beated Outer Hebrides.

Its unique position makes the Isle of Barra distillery the most Western distillery in Scotland and it is also the first legal distillery to open on Barra.

What does Island Dark Rum taste like?

Notes of coconut, clove and caramel can be found on the nose. They continue onto the palate, where they are joined by sweeter brown sugar and zesty citrus flavours. The finish has warm spice touches and a hint of salinity that is utterly delicious.

How do you serve Island Dark Rum?

We recommend trying Island Dark Rum neat first to get a real sense of its full flavour profile.

After that, we recommend serving this deep and rich Isle of Barra rum with Lixir Ginger Ale and a garnish of orange slices.

The complex coconut, citrus, caramel and spice tones of the rum are the perfect match for the sweet, bright, vibrant ginger of the Lixir mixer. The orange then elevates each sip with its fragrant tones.
