Inspired by Yorkshire’s famous Rhubarb Triangle, this cocktail is a delicious way to see in spring!
With its tart-yet-sweet flavour profile, reminiscent of those oh-so-nostalgic pink-and-yellow Rhubarb & Custard sweets, it’s sure to impress any gin and rhubarb fan.
This gorgeous rhubarb and gin cocktail recipe was created by Craft Gin Club’s in-house mixologist, Dan Tripp, using ingredients that can be found in Craft Gin Club’s March 2023 Gin of the Month box.
The gin is York Gin Jorvik Spring, which is full of luscious floral, citrus and spice tones that work marvellously well with rhubarb flavours. The cocktail recipe then mixes York Gin Jorvik Spring with Dalston’s Rhubarb Soda, which is a symphony of bubbly rhubarb notes.
The bespoke Rhubarb & Custard Cocktail Syrup then doubles the rhubarb and introduces fantastic custard flavours that are full of joy. Yum!

50ml York Gin Jorvik Spring
25ml Rhubarb & Custard Cocktail Syrup
100ml Dalston’s Rhubarb Soda
Rhubarb ribbon and rosemary sprig, to garnish* (optional)
Add all the ingredients to a highball glass with ice and stir. Garnish and enjoy!
* To make this garnish, wash and trim your rhubarb, then, using a speed peeler, slice a thin strip down the length of the stalk, so you have a lovely long ribbon of pink rhubarb. You can fold this on a cocktail pick and perch it on the rim of your glass, or wind it around the inside of the glass, pressing gently as you go.
