A modern take on the classic 19th century cocktail, this Bijou is made with yellow chartreuse instead of green - sweet, silky, smooth and sultry.
The Golden Bijou
Stir all ingredients over ice for 10 to 15 seconds, or until diluted. Strain into a cocktail coupe or short tumbler filled with ice. Garnish with a lemon twist and some fennel fronds, if available.
60ml Dry Island Gin
10ml Dry Vermouth
5ml Yellow Chartreuse
Lemon twist and fennel fronds, to garnish
