A cocktail for all the aniseed lovers out there!

If you’re more of a savoury-tooth kind of gin drinker, then this Hayes Fizz is right up your street! Made with July’s Gin of the Month, Theodore Pictish Gin and fennel simple syrup, this summer cocktail is sharp, refreshing and complex!

Hayes Fizz

Ingredients:

50ml Theodore Pictish Gin
25ml lemon juice
15ml fennel syrup*
Soda, to top up
Dill, to garnish

Method:

Add gin, lemon juice and fennel syrup to a cocktail shaker with ice. Shake and strain into a highball glass. Garnish and serve.

*To make fennel syrup, combine one cup of caster sugar with one bulb of fennel, rinsed and chopped. Allow to sit in fridge overnight, so that the sugar can extract juice. Strain the syrup and store in fridge.
