Lavender Bees Knees
Straight out of the roaring 20's, the Bees Knees got its name from simply being 'the best'. To celebrate January's Gin of the Month, the glorious Sabatini Gin, we have added a botanical twist to this classic by introducing the floral notes of lavender.
1. Combine 250ml of water and 250g sugar in a saucepan over medium heat, dropping in a few sprigs of fresh or dried lavender. Simmer until the consistency of a syrup, then strain.
2. In a shaker packed with ice, combine all of your ingredients. Shake, strain into a cocktail coupe and enjoy!

25ml lavender simple syrup*
1 tsp honey
15ml freshly-squeezed lemon juice
