It's almost time to say goodbye to June's amazing Warner Edwards Honeybee Gin, a bottle that's been a bona fide hit with our members! From tasty cocktails to scrummy recipes, there's been a lot of creativity with this incredible spirit - including this gin-soaked 'Fernhill Mess' recipe.

Fernhill House Care Home near Worcester joined Craft Gin Club upon its opening in the spring, and in addition to enjoying all the delicious craft gins we've sent out, their creative hospitality manager, Chris Williams, has also gotten creative by creating some seriously mouthwatering recipes with the spirits.

The Fernhill Mess is his take on the classic Eton Mess, and has a delicious Warner Edwards Honeybee Gin kick to it!

Fernhill Mess

(Makes 6 servings)

Fernhill Mess Eton Mess Honeybee Gin Boozy Dessert

Ingredients:
6 ready-made meringues
570 ml double cream
450g raspberries
75ml honeybee Gin
1 tbsp sugar

Method:

1. Begin by mixing the raspberries, gin and sugar together so the raspberries are covered and slightly macerated.

2. Next whisk the cream until it is firm. Fold the raspberry mix through the cream and then crush the meringues into the mix and give it a final stir. 

3. Finish with finely grated lime zest and voila!!
