Cap off the Bank Holiday with this bright and fruity twist on the Tom Collins. It's just the thing to sip on while we await those hazy summer days!
Recipe adapted from PUNCH
20ml lime juice
Handful fresh raspberries
15ml sugar syrup
Orange slice, to garnish
Lime slice, to garnish
Raspberry, to garnish
In a shaker, combine raspberries and sugar syrup. Muddle.
Add lime juice and gin to shaker - along with ice - and shake vigorously until chilled.
Strain twice into a tall glass filled with ice.
Garnish with orange, lime and raspberry, to serve.
