Blackberry Gin Fizz
25ml blackberry-mint cordial*
400g blackberries, fresh or frozen
2 apples, 1 sliced thinly
1 lemon, sliced
dry cider, chilled
*To make the blackberry-mint cordial:
Preheat oven to 180C/Fan 160C/Gas 4. In a dish filled with 400ml water, place apple slices, blackberries, sugar, lemon slices and a handful of mint. Bake for 30-45 minutes, then strain mixture into an airtight container and allow to cool completely before assembling cocktail.
For the cocktail:
Combine gin and cordial in a shaker glass full of ice, shake vigorously an strain into a martini or coupe glass and top up with cider. Garnish with a slice of apple, a sprig of mint and a blackberry to serve.
