Earl Grey Gin Cocktail

Recipe adapted from One Martini

60ml earl grey tea infused gin
20ml lavender simple syrup
20ml lemon juice, freshly squeezed
1 egg white
1 lavender sprig, to garnish

For the Earl Grey gin infusion:
Place 1 earl grey tea bag into a mixture of 2 cups gin and let sit for 2 hours. Strain the infusion into a bottle and use.

For the lavender simple syrup:
Combine equal parts sugar and water with a tablespoon of fresh lavender blossoms in a small saucepan. Bring it to a boil and stir until sugar dissolves. Simmer for 1 minute and then remove from heat. Let steep for 30 minutes and when ready, strain the mixture and let it cool before using.

Method:

Combine all of the ingredients (except for the lavender sprig) into a cocktail shaker without ice and shake vigorously.
Add ice to the shaker and shake again. 
Double strain the mixture into a chilled glass, garnish with the lavender sprig and serve!
