A spirit as special as January's Glendalough Wild Botanical Gin requires a cocktail of an equal calibre. This take on the classic Tom Collins definitely passes the test!
50ml Wild Botanical Gin
10ml Apple Cider Vinegar
30ml Sugar Syrup*
8 mint leaves
100ml Sparkling Water
Add all of the ingredients except the sparkling water into a shaker. Shake hard and strain into a long glass over ice. Top with the sparkling water and garnish with an orange twist and a mint sprig.
*For an extra kick, add 15ml each of elderflower syrup and rose syrup to your batch of sugar syrup
