Every month along with their wonderful craft gin, we send our Club Members a box packed with fabulous artisan goodies to complement their fine spirit.

In February, our members are loving the Coco chocolate we sent them. And no wonder: it's not only very special chocolate made from organic, single origin coco beans - it's also gin and tonic flavoured!

Coco is an Artisan Chocolatier based in Edinburgh that specializes in making ethically traded, organic and, most importantly, delicious chocolate. The company was founded in Edinburgh in 2004 and all its chocolate is still hand-crafted in Summerhall, a creative hub in the heart of the city.

Coco is headed up by Calum Haggerty, who is joined by a tight-knit team. At “the chocolate heart of Coco” are two talented chocolatiers. Head Chocolatier Lionel is a French Pastry Chef with 28 years of experience working across the world, including making elaborate desserts in Michelin star restaurants. Lilly is his apprentice, who Calum describes as “young and talented with lots of chocolate experience, a good eye and a lot of imagination”.

The team also includes creative manager Ania, who acts as Coco’s photographer and leads their chocolate events, and Rachel, who keeps track of customer orders. “It’s a great bunch,” Calum tells us, “in such a small business, everyone is important.” 

The team are also always developing new flavours and recipes, all of which stay true to the company’s founding principles. Calum explains: “We use organic, single origin chocolate to make our products. Everything is done by hand without the use of soy, gluten or any artificial additives. Our chocolate has a distinctive taste and there's a lot of love that goes into making it.”

The award-winning Gin & Tonic bar in our February Gin of the Month box this month is no exception. The dark chocolate contains 64% cocoa, which is made from an organic, single origin bean from the Dominican Republic. “It has notes of tropical fruit on the nose and warming woodiness in the body,” Calum tells us. “Its citrus notes are enhanced by lime and lemon oils to give it a refreshing and rich taste with a sharp finish from the juniper essential oil. That's the magic of the botanicals that we are using.”

The finished product, with flavours of juniper, lemon and lime is pretty much paradise for anyone who loves gin and chocolate!

Some of Coco’s other delicious creations include bars with flavours such as Rose & Black Pepper and Haggis Spice, as well other magical treats like their Kirsch-soaked chocolate-dipped cherries and some decadently decorated boxed truffles.
