This delectable gin, chocolate and coffee mousse recipe makes a dessert that’s silky smooth and wonderfully rich.

Each joyous mouthful is fragrant with notes of dark chocolate and elegant gin flavours, both of which work so incredibly well with aromatic coffee tones that come from a not-so-secret ingredient, Taylors of Harrogate Coffee Bags. They are an amazing invention that’s changing the way we make coffee, which is why we just had to include their Rich Italian and Hot Lava Java editions in our September 2020 Gin of the Month box!



Gin, Chocolate and Coffee Mousse

Gin, Chocolate and Coffee Mousse

Ingredients

180g dark chocolate (at least 70%)
50ml gin
100ml coffee brewed from 1 Taylors of Harrogate Rich Italian Coffee Bag (leave the bag in freshly boiled water for at least 5 minutes)
6 egg whites
6 egg yolks
100g caster sugar
100ml double cream

Method

Fill 1/3 of a large pan with water and bring to the boil.

Break the chocolate into small pieces and place them in a mixing bowl.

When the water in the pan has come to the bowl turn off the heat. As soon as the water stops bubbling place the bowl of chocolate over the pan to slowly melt the chocolate.

Place the double cream in a separate pan on medium heat. Warm the cream up but do not allow to boil.

When the chocolate has fully melted add the gin, the coffee, the hot cream and the egg yolks. Stir continually until everything is fully incorporated.

Using an electric whisk, whisk the egg yolks until soft peaks form. Continue to whisk the egg whites as you add the sugar to the egg whites a little bit at a time to create a meringue.

Delicately fold one-third of the meringue into the chocolate mixture. Once incorporated, fold in the second third and then the remaining third.

Pour the mousse into a whatever you are going to serve it in, it’s just as nice in one big bowl that you can serve from or in individual glasses or ramekins.

Allow the mousse to set in your fridge for at least 4 hours.

Serve with a dollop of cream or creme fraise and berries or fruit of your choice.
