How is York Gin Jorvik Spring made?

York Gin Jorvik Spring is made by the Yorkshire gin distillery York Gin, which was founded by five friends: Emma Godivala, Harry Cooke, Paul Crossman, Peter McNichol and Jon Farrow.

Taking inspiration from York’s Viking history and Yorkshire’s beautiful landscape in spring, the York Gin team create York Gin Jorvik Spring taking botanicals synonymous with the Yorkshire landscape like heather and lavender.

They then combine those botanicals with other botanical ingredients that nod to Yorkshire’s cultural heritage, like ginger, which is famously used in Yorkshire parkin cake, white rose - the age-old symbol of Yorkshire - and Szchezuan pepper, here used as a reference to York’s key position on trade routes in the north of England.

You can find York Gin Jorvik Spring’s full list of botanicals here: juniper, lavender, heather, liquorice, ginger, white rose, coriander, angelica, dried orange peel and Szechuan pepper.

Those botanicals are all distilled together by York Gin and the resulting gin is bottled in York Gin’s icon square glass gin bottle. Et voila!

What does “Jorvik” mean?

“Jorvik” is both the Viking name for York and the old Norse word for spring.

What does York Gin Jorvik Spring taste like?

On the nose, English lavender and heather leap out of the glass, atop that classic, rich juniper base. Yorkshire liquorice and ginger provide a spiced backbone on the palate, with a lingering note of sweet orange that lasts long into the delectably moreish finish. It’s a true taste of Yorkshire from a true Yorkshire gin company.

How do you serve York Gin Jorvik Spring?

We recommend serving York Gin Jorvik Spring with Schweppes Slimline Elderflower Tonic, using slices of lime and black peppercorns to garnish. Winner of the Best English Old Tom award at the World Gin Awards, this masterfully crafted Old Tom gin was made in collaboration between York Gin distillery and the Star Inn, a Michelin-starred restaurant in Harome. It’s slightly sweeter than York Gin London Dry, herbaceous and floral in all of the right places.
