Wicked & Wonderful Sibling Gin Truffles

If your aspiration is to create amazing chocolates, then there’s no better place to start than Belgium, exactly where the master chef behind Wicked & Wonderful Chocolates, Benjamin Axford grew up.
After reading law at university and working corporate in the Big Smoke for a while, Ben was hungry for something different. So, in 2001, he sated himself by completely switching careers to his real passion, food.
He began with a cheese and wine deli, one that one a few awards. At the same time, he entered the BBC’s Masterchef competition; his foodie passion and talents got him to the finals.
His second venture in the food and drink space was a fine dining service in customers’ homes. Part of the development of these bespoke meals were end-of-meal chocolates created by Ben, which is how he finally decided to launch Benjamin Chocolatier.
Within four months of his new artisanal chocolate venture, Ben had won a Silver Medal at the Academy of Chocolate Awards, the equivalent of the BAFTAs for chocolatiers. In 2014, he launched Wicked & Wonderful Chocolates as a foray into retail establishments and soon he will be featured in such esteemed venues as Harrods.
Benjamin Chocolatier is based just a three-minute walk from the Sibling Distillery. When the Elliot-Berrys launched their gin in June 2014, Ben was there to accompany them with some bespoke, Sibling Gin chocolates.
For Craft Gin Club Members this December, Ben has made truffles to especially accommodate Sibling Gin. Since Sibling is a more delicate than some gins, he decided it would be best paired with white chocolates. The gin and white chocolate is mixed with lemon zest and oil, juniper and black pepper to balance the sweetness. Wicked & Wonderful truffles are made with coconut oil instead of cream which gives them a cleaner, longer flavour.
