So we have taken some of our favourite ingredients and flavours and have put them into one mouthwatering twist on the Daiquiri. Introducing Craft Gin Club's Rhubarb & Apple Gin Daquiri!

Yes, you read that correctly, this frozen cocktail is fruity and vibrant and perfect for when the sun starts to shine through spring and summer.

Let's start with the gin. For this recipe, we think it has to be Wabi Sabi Sakura Gin (Craft Gin Club's April 2024 Gin of the Month!).

Coming from Wabi Sabi Gin in Japan, this beautiful craft gin is inspired by and made using, Japanese cherry blossom (sakura) and savoury, woody herbs like rosemary, bay and thyme.

It has a wonderfully floral-led palate, with an aromatic herbaceousness that works incredibly well with the rhubarb and orchard fruit notes in this cocktail.

Here, the rhubarb flavours come from Craft Gin Club's Rhubarb Syrup, which is sweet and bursting with incredible rhubarb flavours - works great in our Rhubarb Sour too.

All that's left to do then is add your favourite artisan apple juice (the better the quality, the better your cocktail will be) and a good squeeze of fresh lime to give you that quintessential burst of citrus that we love in any good Daiquiri.

To make the cocktail, you simply blend the Wabi Sabi gin, rhubarb syrup, apple juice and lime juice with ice and then pour it into a glass and enjoy. It's that easy!

Rhubarb & Apple Gin Daiquiri

Frozen Rhubarb and Apple Daiquiri made with gin

50ml Wabi Sabi Sakura Gin
25ml Rhubarb Syrup
20ml fresh lime juice
75ml apple juice
Fresh apple and lime slices, to garnish

Add the gin, syrup, and fruit juices to a blender with a big handful of ice and blend until you have an even, slushy-like texture. Pour into a glass. Garnish, serve and enjoy!
