Apple Cider Gin Fizz

Apple Cider Gin Fizz with cinnamon stick cocktail

Ingredients:

60ml sparkling apple juice
3 tablespoons apple cider simple syrup (see below)
125ml gin
2 tablespoons orange juice
1 egg white, room temperature
1 teaspoon single cream
125ml cold sparkling water
light brown sugar, to
rim glasses
Cinnamon sticks and apple slices, to garnish

For the apple cider simple syrup:
Bring 250ml sparkling apple juice, 220g brown sugar and 1 cinnamon stick to a boil. Boil until the sugar is completely dissolved and then simmer on low heat until mixture becomes thick - approximately 5-10 minutes. Allow the syrup to cool or refrigerator until ready to use.

Method:

  1. Add brown sugar to bowl. Use a sliced orange wedge to moisten rims and dip in the brown sugar. Set aside.
  2. Place the sparkling juice, syrup, gin, orange juice, egg white, and single cream into a large shaker (without ice). Shake vigorously for a couple of minutes, then fill shaker with ice.
  3. Shake until everything is frothy and quite cold. Put 30ml sparkling water in each of the two glasses. Strain mixture into glasses. Pour remaining water into the shaker to pick up foam left behind. Spoon remaining froth on top of the cocktails and garnish each with a cinnamon stick and apple slices. Serve immediately.
